This is the perfect game day -1 meal to load up on those carbohydrates.

INGREDIENTS:

  • 400g Gnocchi
  • 150g Cherry Tomatoes
  • 100g Chicken Breast (Raw)
  • 60g Light Mozzarella
  • 30g Basil Pesto

Boil the kettle and pour 1 litre of water into a large bowl, add your gnocchi and allow to sit for 3-5 minutes to soften the gnocchi.

To a roasting tray, add the halved cherry tomatoes, cubed chicken breast, softened drained gnocchi and basil pesto. Mix really well to combine and coat in the pesto.

Lastly, tear over the mozzarella cheese into bite size pieces and transfer into a preheated oven at 190C.

Cook for 20-25 minutes until the chicken is cooked through and the gnocchi is crispy.
