INGREDIENTS:
- 300g Finest Mincemeat
- 150g Bramley Cooking Apples
- 80g Filo Pastry Ready Rolled Sheet
- 10g Extra Virgin Olive Oil Spray
- 5g Icing Sugar
Preheat oven to 180°C. Core, peel, and chop the apple, then cook in a saucepan with a splash of water over low-medium heat for 5-6 minutes, stirring occasionally, until softened. Remove from heat and let cool slightly.
Layer 3 sheets of filo pastry, cut into 24 pieces. Spray a muffin tray with olive oil, then place 3 pieces of filo in each of the 6 holes, spraying between layers.
Mix the mincemeat with the cooked apple and fill each pastry base evenly. Roll the remaining filo, cut into ribbons, and sprinkle over the pies. Spray with olive oil and bake for 25 minutes, until golden.
Cool for 5-10 minutes, then gently remove from the tray. Dust with icing sugar and serve!
