This baked energy bar with apple, oats, puffed rice and raisins is perfect for when you are out and about, or competing on a hot summer’s day and need a tasty, energy-packed snack to keep you going
INGREDIENTS:
- 1 Whole Can Tinned Apple Slices
- 180g Porridge Oats
- 170g Medjool Dates
- 1 cup loosely packed Raisins
- 90g Honey
- 60g Puffed Rice Cereal (Fortified)
- 1 Teaspoon Ground Cinnamon
METHOD:
Place 1 cup of dates in a jug and cover in just boiled water. Stand and allow to soak for 10 mins until softened.
Drain the dates but keep the water. Use a blender to puree the dates, adding approximately 4 tbsp of the reserved water to get a thick but runny puree.
To a bowl, then add the rest of the ingredients: apple slices, raisins, oats, puffed rice cereal, cinnamon, and honey. Mix well to combine and coat all ingredients in the honey and date puree.
Transfer all of the mixture into a lined baking dish and bake for 35-40 mins until cooked through and golden. Remove from the oven and allow to cool before slicing into 8 bars.
