3 core ingredients of banana, eggs and oats gives athletes versatile base to be creative and make their own combination of scrambled oats!
INGREDIENTS:
- 1 large Banana
- 80g Jumbo Whole Rolled Oats
- 1 large free range chicken egg
In a bowl mash the banana and then crack the egg into the bowl and mix well.
Add 1 cup (80g) jumbo oats to the bowl and mix well coating all of the oats in the banana and egg mixture
Heat a frying pan over a low-medium heat until warm and then add a spray of olive oil (approx. half a teaspoon) and then add the oat mixture. Flatten out and spread across the pan. Cook for 2 mins not stirring.
The base should have been browned now using a spatula or wooden spoon move the mixture around the pan as you would scrambled egg cooking all of the mixture and breaking any chunks apart.
After 3-4 mins the steam should have cooked off and you are left with a browned collection of oats which smell like banana bread. Serve immediately or cool and use later on. You can add yogurt and fruit or make a smoothie bowl as a base.
