A simple 3 ingredient banana bread recipe with chocolate chips for toppings is a great low fat, high carb refuel for athletes. Personally, I love to pair this recipe with some low fat greek yogurt and fruit to increase the protein content!
Ingredients:
- 4 medium Bananas
- 397g Carnation Condensed Milk
- 280g Self Raising Flour
- 90g Chocolate Chips
Method:
Preheat the oven to 180C and line a loaf tin with greaseproof paper.
In a blender blitz together the whole tin (397g) of condensed milk and the 4 medium bananas to form a smooth batter.
In a large bowl sift 2 cups of self raising flour and then pour in the banana and condensed milk batter. Combine well until there are no dry spots left and then add in the 1/2 cup chocolate chips. Mix lightly then pour into the lined loaf tin.
Place the loaf tin into the oven and bake for 35-40 mins until cooked through. Insert a skewer or sharp knife into the middle and when you pull it out it should be pretty clean which lets you know it is cooked throughout. Allow to rest for 10 mins and then slice into 10 portions. It will keep at room temperature for 5 days.
