Nutrition X Performance Nutritionist, Dr. James Hudson, treats us to his go-to guilty (not-so-guilty) pleasure - Protein Waffles.
Ingredients:
- 2 Large Bananas
- 1 Large Egg
- 2 Tbsp Coconut Oil
- 3/4 Cup Semi-Skimmed Milk
- 1/2 Cup of Halved Pecans
- 1 Tsp Baking Powder
- 210g Wholemeal Flour
- 30g Maple Syrup
- 1/2 Tsp Ground Cinnamon
Method:
In a blender, combine the coconut oil (softened in the microwave), milk (can be cow's or nut based), vanilla extract, the bananas, maple syrup and the egg. Blend well.
Then in a large bowl combine the dry ingredients: Wholemeal plain flour, baking powder, pecan nuts (chopped into halves roughly), and the ground cinnamon.
Pour the blended wet ingredients into the dry ingredients bowl and mix well with a spatula until there are no dry spots remaining.
Allow to rest for 5 mins whilst the waffle iron heats up.
Pour half cup of the final batter into the waffle iron and cook until the steam has stopped escaping and the waffle is cooked through (3-4 mins).
Serve with Greek/Skyr yogurt and fruit.
